2010 vintage, Qualitatswein Rheingau, Germany. The name literally translated means 'Stick over Stone", which aptly describes the vineyard's soil of clay and fist sized chunks of slate. Rheingau is located in the northern Rhine River Valley is one of the oldest and most noteworthy appellation of Germany. Steel fermented and steel aged for 6 months on its Lees, filtered and bottled in April 2011. This wine is organic, but as of yet, uncertified. Only 500 cases produced.
- Nose: Apple, white peach and bread yeast.
- Mouth: Light and crisp with a slightly sweet start followed by tart apple and wet slate.
- Finish: Dry and extremely clean and refreshing.
- Pairing: Oysters, tuna tartare, tarragon chicken, Cantonese style Asian cuisine.
